The 200mm chef knife is the most popular knife, especially among home cooks. It is the perfectly sized blade for use in the home kitchen. It has a light and nimble feel to it that allows for its use in all kinds of cutting, slicing, and chopping scenarios.
The stainless steel blade is AEB-L from Uddeholm with a hardness of 61 Rockwell, it is easy to sharpen and keeps a good edge. This blade tapers to a fine tip and has a convex grind that is thin which makes it cut very well.
