The Highland Jewel: Guatemala Huehuetenango (Strictly Hard Bean)
The Origin: Tucked away in the secluded valleys of Guatemala’s rugged Western Highlands, our Huehuetenango is grown at elevations up to 1,830 meters (6,000 feet). At these heights, the cool mountain nights force the coffee cherries to mature slowly, resulting in a Strictly Hard Bean (SHB) with concentrated sugars and unmatched flavor density.
The Artisan Standard: To achieve our signature clean cup, these beans are prepared using the European Preparation (EP) standard. This means every batch is meticulously hand-sorted until fewer than 8 defects remain per 300 grams—a level of precision that ensures a vibrant, flaw-free brew every time you grind.
The Profile:
Primary Notes: Bright Citrus, Juicy Plum, and Smooth Milk Chocolate.
Finish: Exceptionally clean with a crisp, wine-like acidity.
Process: Fully Washed & Patio Sun-Dried.
